Lemon Cream - an excellent alternativevanilla custard. Sweet cream with sour cream and citrus scent is perfect for cakes, pies, cakes and other baked goods. And yet, this delicacy can be submitted as a separate dessert for tea or coffee, just put on a plate and garnish with thin slices of lemon.
The way to diversify the lemon cream, the recipe can be a little change. You can take instead of lemons and grapefruits oranges, and even add sugar and vanilla essence.

- 3 lemons;
- 250 g of sugar;
- 100 g butter;
- 5 egg yolks;
- 50 g of lemon juice;
- a pinch of salt.

Remove the zest from the lemons. White crust, do not remove - it is bitter.
Squeeze of lemon juice.
Mix the sugar and lemon zest in a food processor or blender.
Mix until uniform all.
In a separate bowl, combine soft butter and sugar with zest. Mix everything with a mixer or by hand with a fork.
Add the egg yolks, introducing them one by one, and stirring constantly.
The resulting mass is mixed thoroughly.
Add lemon juice and salt, mix well.

Ready lemon cream, remove from heat and cool completely.
