Rice casserole with vegetables and chicken breast

Rice casserole - a recipe that can beserved as breakfast, so for lunch or dinner. This dish includes useful cereals, meat protein and vegetable fiber. Such casseroles "three in one" very nutritious and able to satisfy your hunger and saturate the body with strength for the whole day. The successful combination of boiled rice, chicken, cheese, mushrooms and roasted vegetables will impress even the most sophisticated gourmet.

  • 100 g of rice;
  • 1 sweet pepper;
  • 1 onion;
  • 100 ml chicken broth;
  • 4 tbsp. olive oil;
  • 300 g chicken breast;
  • 200 g button mushrooms;
  • salt, black pepper, spices - to taste;
  • 100 g of hard cheese;
  • 2 eggs;
  • 150 g sour cream.

Pepper, onion and mushrooms, wash, clean andcut into cubes or strips. Fry the vegetables until cooked in a pan with the addition of olive oil. If desired, you can add them to a recipe carrot, garlic, peas and other vegetables to your taste. At the end of cooking the vegetables with salt and pepper.

Boil the rice in salted water. Wash the chicken breasts, chopped and just fry in vegetable oil in a frying pan with spices and salt. Connect boiled rice, fried meat, mushrooms and vegetables. All mix well on smooth.

Now prepare the filling for casseroles. To do this, mix half the grated grated cheese, sour cream, broth and eggs. Pour dressing rice-meat mixture and mix well.
