Yoghurt cake with dried fruits

This dessert is obtained by air, sweet, with a taste of dairy cream and sour berry. Yoghurt Cake can be submitted to tea or coffee, garnished with slices of dried fruit or a scoop of ice cream.

  • 250 g of any of yogurt;
  • 3 chicken eggs;
  • 2-3 tbsp. spoons of sugar;
  • 1.5 cups flour;
  • 40 g butter;
  • 2 tbsp. tablespoons vegetable oil;
  • 1 packet of baking powder;
  • a pinch of salt;
  • 1 packet of vanilla sugar;
  • 150 g of any dried fruit (raisins, prunes, dried apricots, lemon peel).

Put the oven heated to 180 gr.S. The shape of the baking grease with butter. Dried fruits rinse under running water and pour boiling water for 5-10 minutes. Separate the egg whites from the yolks. In a deep bowl, beat egg yolks with sugar, salt and vanilla. Continuing to whisk, add the yogurt, vegetable oil and melted butter. In a separate bowl, whisk the whites into a solid foam. Gently fold whites into the batter and mix until smooth. Pour the liquid (consistency of thick cream) batter into the pan for baking muffins.
