Swedish meatballs of lean meat

Meatballs in the oven, the recipe of which is given below,I spied on Swedish television. Chef of the Swedish culinary program "Muppets" so good to show and tell about this dish that I could not resist and on the same day prepared something similar with small amendments because of the absence of some spices. Nutmeg and allspice I did not have (the recipe I give these ingredients, as advised in the TV show). However, it turned out, in my opinion, excellent. Ingredients for the "Swedish meatballs of lean meat":

For the meatballs:

  • 600g minced turkey;
  • 2 tbsp. tablespoons butter;
  • 1 onion, finely chopped;
  • 1/4 cup milk;
  • 2 large eggs;
  • 1/2 cup bread crumbs;
  • 3/4 teaspoon ground black pepper;
  • 1/4 teaspoon ground nutmeg;
  • 1/4 teaspoon ground allspice;
  • 1 teaspoon of fine salt;
  • a pinch of cayenne pepper.

For the sauce:

  • 2 tablespoons butter;
  • 3 tablespoons flour
  • 2-3 cups chicken broth;
  • half a cup of cream (10-15% fat);
  • half teaspoon of sugar;
  • 1/4 teaspoon Worcestershire sauce;
  • salt and black pepper - to taste.

Recipe "Swedish meatballs of lean meat":

Melt 2 tablespoons butter ina large frying pan over medium heat. Mix the chopped onion and a teaspoon of salt in butter, and cook until the onion begins to acquire a golden color translucent (about 6 minutes).

Transfer the fried onions in a large bowl, add the milk.

Put in a bowl the eggs, bread crumbs, black pepper, nutmeg, allspice, cayenne pepper - mix well and whisk until smooth.

Add to the mixture of minced turkey, stir.

Cover with plastic wrap and refrigerate for 1 hour.

Meanwhile, melt 2 tablespoonsof butter in a large skillet over medium heat, add the flour to the butter, stir well and cook until golden brown (about 2 to 3 minutes). Slowly pour in the chicken broth in a mixture of oil and flour.

Increase a little heat to medium-high,Pour the cream into the mixture and bring it to a boil. Add sugar and Worcestershire sauce. Simmer until slightly thickened (6 to 7 minutes). Season with salt and black pepper. Remove from heat and set aside.

Preheat oven to 220 gr. C. Cover the pan with aluminum foil and lightly sprinkle it with vegetable oil (I use spray oil - an excellent thing).

From stuffing shape meatballs, using 2 to 3teaspoons minced for each ball (so the meat does not stick to the fingers, each time soak your hands in water). Place on prepared baking tefeli.

Bake the meatballs in the preheated oven until golden brown - about 20-25 minutes.
Remove the meatballs from the oven and transfer to a pan with the sauce. Pour the sauce all the meatballs and cook over medium heat for about 5 minutes.

Serve the meatballs hot with boiled potatoes.
Swedes in these lean meatballs recommend to add a spoonful of sour cranberry jam. A bit unusual for our taste. But I try - something in it. Try and you!
