Soufflé liver - very tasty and tender dishwhich will decorate the table for any event. Delicacy beef liver is obtained an extremely light and juicy thanks to the addition of butter, milk and onions.
Soufflé is baked in special tinscupcakes, so as a result you get a small liver cake. They can be used as a separate dish, submitting, for example, to potatoes or vegetables. And it is possible to present as a snack, putting on top of the bread. Especially good soufflé beef liver is combined with sauteed vegetables in a tomato or cream sauce. By the way, you can improve the recipe, adding the beaten egg, any spices at its discretion, crushed garlic, fresh herbs or grated cheese on a grater.

- 500 g beef liver;
- salt, black pepper - to taste;
- 50 ml of milk or cream;
- 40 g butter;
- 1 bulb onion;
- 2 slices white loaf (of bread).

Liver wash well and boil until tender. While stewing meat, clean and chop the onion, then fry it in a pan with butter until golden brown. Cooked liver and onions cool and transfer to a bowl of food processor.
Chop the liver with onion in a food processor. Add soaked in milk (cream), breadcrumbs, salt and spices. If you do not have a food processor, you can skip all the ingredients through a meat grinder and mix until smooth.
Small baking dish grease with butterbutter and fill them with a mixture of liver. Put the pan with the forms in a preheated to 200 oC oven and bake until the top browning (about 15 minutes).
