Priming cake with apricots

A cake with apricots and honey - a sweet summergreetings from the French bakery. The first apricots of the road, so they take a little more than half a kilogram. That amount can not feed the family, but the cake with apricots will give the opportunity to try a tasty treat for everyone.

Such light cakes with fruit filling -perfect for the summer menu: delicious and low in fat and calories! And besides, for the apricot cake, the recipe of which I propose should be a relatively modest amount of sugar, although it is better to add sugar depending on the sweetness of apricot themselves.

Ingredients for "Priming cake with apricots":

  • 1.5 cups (200 grams) of wheat flour;
  • 1 pinch of salt;
  • 1/3 cup (70 g) of brown sugar;
  • 1/3 cup (85 g) of butter;
  • 2 tbsp. tablespoons vegetable oil;
  • 600-700 grams of apricots;
  • 1 lemon (or lime);
  • 2/3 cup (150 g) sour cream or yogurt;
  • 2 eggs;
  • 3 tbsp. spoon of liquid honey.

Recipe "Priming cake with apricots":

Mix the flour, sugar and salt
Mix the flour, 1 pinch of salt and brown sugar in a bowl.

Add the butter and knead the dough
Divide the butter into small pieces and add to flour mixture.
Also add in a bowl a tablespoon of vegetable oil and knead the dough is smooth with a hand blender ( "hook" nozzle).

Roll out dough
Sprinkle lightly with flour work surface, lay out the dough lightly obmesite and roll in a big circle (about 32 cm in diameter).

Put the dough into the mold and pierce with a fork
Grease a round shape (I have 28 cm in diameter) with vegetable oil.
Put the dough into the mold, wrap up and push the edges, pierce the dough with a fork several times.

Clean and decompose apricots
Wash the apricots, cut in half and remove seeds.
Spread half the dough on the surface of the apricots cut up.

Remove the zest from the lemon
Wash the lemon in hot water and wipe dry.
Remove the lemon zest using a fine grater.

Cooking fill and pour apricots
Mix sour cream, eggs, honey, a couple of tablespoons of flour and lemon zest together by the corolla.
Pour the mixture into the mold on top of the apricots.

Bake, cool and serve pie
Bake a cake with apricots on the middle rack in preheated oven at 200 oC for about 35 minutes.
Remove the cake from the oven and let it cool for about 1 hour in the form of directly on the grill.
Then remove from the mold and serve.
