Chicken baked in the oven in Greek

Chicken baked whole in the oven,prepared by the Greek recipe, I was prepared for the first day of 2014. We are waiting for the guests, and I do not think of anything else how to bake a whole chicken. But it turned out unusual succulent dish, really reminiscent of the south and Greece, are very different from those of hens, which I fully baked the day before.

And besides, with chicken baked whole in the oven, I Serve fried brussel sprouts with garlic, lemon and feta cheese, and it turned out delicious combination!

  • 1 whole chicken without giblets - up to 2 kg;
  • 400g cherry tomatoes;
  • 1 onion, coarsely chopped;
  • 1 can of black olives (400 g);
  • 10 peeled garlic cloves;
  • 3-4 tablespoons. olive oil;
  • salt and freshly ground black pepper - to taste;
  • garlic powder - to taste;
  • spices for chicken - to taste;
  • 3/4 cup chicken broth.

Preheat oven to 220 degrees C. Prepare the chicken: chicken carcass wash, remove excess fat and take a deep incision along the bird back. Grab a cut finger on either side and with force, expand the (dilute) incision in the side.

Mix in a bowl 2 tablespoons. olive oil, half a teaspoon of salt and black pepper, and a teaspoon of garlic powder and spices for chicken. Carcase chicken liberally lubricate the prepared mixture - inside and out.

Oil the baking tin and place the chicken carcass cut down and the breast up, as shown in the photo.

Place a shape with a chicken in the oven and cook for 60-75 minutes or until the meat is tender.

Remove the chicken from the oven and reload it on the cutting board, sprinkle with finely chopped parsley and let it cool for 7-10 minutes before you cut.

Once the sauce into containers for baking settles, with a spoon to remove as much fat from the surface of the sauce as possible.

Serve the chicken with garlic rice, overlay them with baked vegetables and watering from the top to form the sauce.
