Kurnik cake of puff pastry

How to cook Kurnik - Tatar realcake of puff pastry stuffed with chicken - I learned from his former classmate. She served us this masterpiece of oriental cuisine than once on our student gatherings. The recipe she got from her grandmother - Crimean Tatar.

Later I learned that there are similar recipes in Turkish, and Indian cuisine. But for me the Tatar cuisine echpochmak represent it (see recipe). Kurnik and cake - the recipe of the puff pastry.

They say he also made from yeast dough, butI always take a simple puff pastry without yeast, which is preparing itself for the different dishes. For filling take one chicken, though, of course, will suit any chicken meat. But Kurnik - it is always a holiday, so I take the meat better.

Ingredients for "Pie kurnik puff pastry":

  • 4 tbsp. tablespoons butter;
  • 4 tbsp. spoons white flour / s;
  • 1/2 teaspoon dried thyme.;
  • 1/2 tsp dried sage.;
  • 1 cup chicken broth;
  • 1 cup heavy cream;
  • 1 boiled chicken breast (500 g);
  • 1 package frozen peas and carrots (450 g);
  • 400 g of finished flaky unleavened dough;
  • 1 egg (or a protein and a tablespoon of milk.);
  • 1/2 cup chopped green onions;
  • 1 tbsp. spoon sunflower oil;
  • 1/8 teaspoon white pepper.;
  • salt and black pepper - to taste.

The recipe for "Cake kurnik puff pastry":

Preheat the oven
Turn the oven on medium heat, let heated to 200-215 oC, while you are busy preparing Kornik.
Melt butter in a large frying pan over low heat.

Heat the flour and spices in a pan
Add to the pan the flour, sage, thyme, salt, black and white pepper.
Heat, stirring constantly, until the mixture is smooth and starts to sizzle.

Add the broth and cream
Add chicken broth and cream, bring mixture to a boil, stirring constantly.
Boil the mixture for one minute with constant stirring.

Add the chicken and vegetables
Boiled chicken breast cut into middle-sized cubes.
Add to the pan the chopped chicken and frozen vegetables and stir.

Add the green onions
Bring the mixture to a boil, stirring often.
Add green onions, stir, remove from heat and set aside.

Roll out dough cakes
Divide the dough in half.
Roll out half the dough on a well floured surface. Korzh should be large enough to cover the baking dish pie.
Grease a baking dish with oil and place the cake dough into the mold, as shown in the photo.

We spread the filling on the dough
Put the stuffing chicken with vegetables in the form on top of the dough.

Cover with the other stuffing Korzh
Roll the cake in the second half of the dough and place it on top of the cake.

Cropped excess dough
Spend a sharp knife along the edge of the baking dish to cut the excess dough.

Fix the edge of the cakes
Blindly along edges of the dough, giving it a wavy curly shape.

Pierce the upper cake
