Chanterelles fried with onions in sour cream - a richfiber side dish, one portion of which will provide you with two-thirds of the daily rate of iron - and all without meat! These mushrooms also contain a lot of vitamin D, which is necessary to include in our menu (especially in the winter months).

- 300 g fresh chanterelles;
- 1 medium onion;
- 1 bunch green onions;
- 2 tbsp. tablespoons of sunflower oil;
- 2/3 cup sour cream;
- 1 tbsp. teaspoon dry mustard;
- salt and black pepper - to taste.

Chanterelles clean and wash, very large - cut. (Heavily soiled mushrooms can be washed first, and then clean with a brush and wash again).
Peel the onion and cut into small cubes.
Wash the green onions, shake off the water from it and cut the green part only small pieces.
Heat the oil in a frying pan.
Fry the mushrooms with constant stirring for 3-4 minutes at a very high heat.
Reduce heat to medium.
If necessary, add to the pan even a spoonful of butter and add to mushrooms diced onion.
Fry all together for 2-3 minutes. Season with salt and pepper.
Pour into the pan the cream, stir, bring mixture to a boil and let it simmer for about 2 minutes.
Add the mushrooms in cream sauce, dry mustard and mix. Taste and add salt and pepper if necessary.
Now chanterelles fried with onions in sour cream, sprinkle with green onions, cover the pan lid, turn off the heat and let the dish stand for 5-6 minutes.
