Eggplant with cheese

In this recipe, eggplant baked withtomatoes and garlic for a delicious crust of the two kinds of cheese. This dish can be prepared as a snack for any holiday table. Lightly fried vegetables perfectly with melted cheese and fragrant basil and other spices give the eggplant rich taste and aroma.

Ingredients for "Eggplant with cheese":

  • 4 medium eggplants;
  • 200g mozzarella cheese;
  • 200 g parmesan cheese;
  • 3 tomatoes;
  • salt, basil, pepper and other spices - to taste;
  • 2 cloves of garlic;
  • 2 tbsp. spoons of olive oil.

Eggplant wash well and cut thin(1-1.5 cm) strips along. Tomatoes also wash and cut into small cubes (you can grate). Garlic chop with a knife, grate or pass through the press.

Fry in a pan until soft stripeggplant in olive oil. Put them on a plate. Then lightly fry the chopped tomatoes, add them to the garlic, salt and spices to taste. Simmer a few minutes until the moisture evaporates, and tomatoes will not turn into a thick sauce.

Now for the preparation of cheese. Mozzarella cut into small slices, and cheese rub on a grater.

Cover the dish with foil and send it in the oven. Bake at 180 oC approximately 15-20 minutes.
