Courgettes with cheese in the oven, you can cook allyear. For this dish you will need only two zucchini (I took the green zucchini and yellow squash, but this is purely for beauty, in fact, you can use any zucchini).
I cooked them a couple of times in the winter - of course, in the winter it is expensive. But there is even more reason to enjoy them in high season, is full of them around!
I like to bake zucchini with garlicoven, cut them into thin slices and seasoned with just a little salt, pepper and thyme and sprinkle with cheese. But the dish was more delicious and nourishing, I add to the squash one tomato, one potato and one onion. It turns vegetarian dinner of fragrant, slightly sweet zucchini in the oven with cheese, garlic and spices.
You can use any cheese, but if you have a mixture of cheese - will be even tastier. And the addition of potatoes and tomatoes make the dish is quite hearty.
Ingredients for "Zucchini baked with cheese and garlic":
- 1 medium onion bulb;
- . 1 teaspoon minced garlic;
- 2 medium sized zucchini;
- 1 potato tuber;
- 1 medium tomato;
- 1 tbsp. spoon vegetable oil;
- 1 cup grated hard cheese;
- . 1 tsp dried thyme;
- salt and pepper - to taste.
Recipe "Courgettes baked with cheese and garlic":
Preheat oven to 200 gr.C. Place rack in the middle level.
Prepare foods and baking dish or small roasting pan.
Finely chop the onion and skip through the garlic press.
Fry them in a frying pan with olive (or sunflower) oil until soft (about five minutes on medium heat).
While onions and garlic sauté in a frying pan, wash and finely chop the remaining vegetables into slices.
Grease a baking dish with oil.
Evenly spread out the softened onion and garlic in the bottom of the form.
Over bow vertically, place finely chopped vegetables, alternating slices of zucchini with slices of potato and tomato.
Sprinkle generously vegetables with salt, pepper and thyme.
Cover with foil shape and bake in oven for 30 minutes.
Remove the foil from the mold, sprinkle with grated cheese and bake for another 15-20 minutes, or until the cheese has melted and become a beautiful golden brown.
Serve baked zucchini with cheese to any meat or simply with bread as a separate dish.
