Spring vegetarian lasagna

  • 200 g fresh spinach;
  • 1 package of lasagna plates;
  • bunch of parsley;
  • 2 chicken eggs;
  • 100g ricotta cheese;
  • 150g parmesan cheese;
  • 150g mozzarella cheese
  • salt, pepper, spices - to taste;
  • 2 tbsp. olive oil;
  • 50 g of tomato sauce or ketchup.

In a large saucepan over medium heat, heat 1a tablespoon of olive oil. Chop an onion and a few cloves of garlic, then add them to the skillet. Fry the onion and garlic for 5 minutes, stirring constantly, until they are golden brown. Add the thyme, oregano and sliced ​​mushrooms. Season with salt and pepper to taste everything.

Cook all together for 10 minutes until evaporate excess moisture from fungi and they are soft. Add the washed spinach, stir, remove from heat and set aside the skillet aside.
